Add Some Tasty Greens to Your Thanksgiving Dinner!

Who ever said no good story started with, “so I was eating this salad…”? This seasonal salad is anything but boring. Spice up your traditional Thanksgiving dinner with this apple cranberry walnut salad!

Ingredients for Salad6 cups of baby spinach leaves (or a mixture of arugula and baby spinach)1 red apple1 green apple1 cup of walnuts, roughly chopped½ cup of crumbled feta cheese½ cup of dried cranberries

Ingredients for Dressing (Can easily be doubled)1 cup of apple juice4 tablespoons of apple cider vinegar2 tablespoons of honey½ teaspoon of black pepper¼ cup of oil

InstructionsCore and chop apples. You can use thin or 1 inch slices depending on your preference. Toss spinach, apples, walnuts, feta cheese and cranberries in a large bowl. Mix contents of dressing in a small bowl and add to salad right before eating. This recipe serves 4 to 6 people.

This is also a quick and easy dish to make when in a time pinch. No need for the oven or stove!
